The world of catering has more than one Simon Fooks. This may or may not come as a surprise. The Simon Fooks that I’m interviewing has plied his trade at the Eden Project for a good number of years.
His most recent role there was as Senior Sous Chef, in essence the deputy to the Executive Chef. With a huge brigade of chefs delivering many thousand meals on a daily basis Simon is kitchen hardened yet retains his creative heart.
